Pannenkoekjes!

Tibe's oma & opa kwamen vandaag, om eventjes met hem te gaan wandelen in het zonnetje. Zo kon ik ondertussen nog een beetje in de tuin werken. Iets na drieën gingen ze op wandel en trok ik de tuin in. Om tien voor vijf kuiste ik mijn schup af (letterlijk) en begon te koken, want tegen zes uur hadden oma & opa al een andere babysit-date.

Ik had wel al enkele voorbereidingen getroffen (prei gesneden, linzen gekookt, en de zonnebloempitten geroosterd) en zo slaagden we erin om in een klein uurtje heerlijk te koken voor onszelf, voor Tibe én om alles gezellig tafelend op te eten.

Op het menu: boekweitpannenkoekjes met zachte geitenkaas, linzen en gewokte prei.


Boekweitpannenkoekjes
Eigenlijk was dit vooral "natte vingerwerk": ik kapte wat boekweitmeel samen met drie eieren, en mengde dat met een deel rijstmelk en wat water. Goed mengen tot je een glad pannenkoekendeeg hebt.

Linzen
1 deel groene linzen
3 delen water
een stukje kombu ter grootte van een postzegel
laurierblad

olijf- of sesamolie
1 sjalot
scheut sojasaus

Kook de linzen (ongeveer 25 minuten) in het water met het stukje kombu en het laurierblad
 Verhit de olie in een andere kom, en fruit er de grof gesneden sjalot in. Voeg daarna de linzen toe en bak ze nog wat op. Afwerken met een scheutje sojasaus.

Gewokte prei
1 grote prei
1 teen look
mosterdzaad
sesamolie
scheutje geroosterde sesamolie

Verhit de olie in de wok. Voeg de mosterdzaadjes toe. Wacht tot ze opspringen en voeg vervolgens de fijngesneden look toe. Bak lichtjes op. Snij de prei (wit en groen) in fijne ringen en wok ze tot ze zacht zijn.

Geroosterde zonnebloempitten
Rooster een handvol zonnebloempitten (droog) in een pan. Blussen met een scheutje sojasaus.

Schik de groentjes bovenop de pannenkoekjes, leg daarop enkele sneetjes smeuïge geitenkaas en werk af met de zonnebloempitten.

Omdat ik zo lekker gekookt had, vond ik dat mezelf ook nog eens mocht belonen ook. Als dessertje voor deze heerlijke maaltijd, nam ik een handvol frambozen uit de diepvries, kookte ze in een bodempje water tot ze uiteen vielen (met een scheutje ahornstroop erbij), hakte ik enkele amandelen grof die ik roosterde in een pan en dat alles goot ik over enkele bolletjes (soja)ijs.

Tibes grandparents came to visit us today. They took Tibe for a walk in the sun, while I worked in the garden. By six o'clock dinner had to be ready, because they had another babysit-date with our nephews.

I did some things in advance (chopping the leek, boiling the lentils and grilling the sunflowerpips), and so we managed to cook ourselves a delicious meal, make Tibe some fruit and eat it all together.

On the menu: buckwheat pancakes with soft goat cheese, lentils and sautéed leek.

Buckwheat pancakes
I don't really follow a recipe for this one, I just mix the ingredients according to my feeling.
- mix 3 eggs with buckwheat, one part of rice milk and one part of water until you reach the right substance... 

Lentils
1 part green lentils
3 parts of water
a piece of kombu, the seize of a stamp
1 laurel leave

olive or sesame oil
1 shallot
some soy sauce

Bring the lentils to a boil (about 25 minutes) in the water with the kombu and laurel. Heat the oil in a different bowl, fry the shallot (which is chopped in large pieces). Add the lentils and fry a little. In the end, add some soy sauce.



Sautéed leek
1 large leek
1 clove of garlic
mustard seeds
sesame oil
roasted sesame oil

Heat the oil in a frying pan. Add the mustardseeds and wait till they jump.Then add the garlic and gently fry along. Chop the leek in thin slices (the white and the green part) and fry until they are soft.

Grilled sunflowerpips
Grill a handful of sunflowerpips in a dry pan. Stifle with a little soy sauce.

Arrange the vegetables on top of the pancakes, put some slices of soft goat cheese on top and finish with the sunflowerpips.

Because I made such a delicious meal, I thought I should reward myself with a nice dessert: I took a handfull of frozen raspberries and put them to a boil in a little water, until they fell apart. I added some maple syrup to the sauce. I chopped some almonds and roasted them, and put it all over some cones of (soy)ice cream.

Yummy!
